Getting back in the swing of it: Meal Prep Edition

So I’ve started back in getting into the habit of healthy eating and working out. I personally use the 21 Day Fix by Beachbody because of the simplicity of the nutrition plan and the workouts! Plus how many workout programs do you know of that allow for wine and chocolate??? Yeah I didn’t think so, and on top of all of that I get a coach to answer all my questions and kick my tush when I’m slacking! It’s a pretty perfect system! So today I did some meal prep, because if there is anything I’ve learned it’s that a little bit of meal prep goes a LONG way in staying on track and seeing results!! So today’s meal prep included boiling eggs, making shredded chicken in the crockpot, and making egg muffins.  My favorite thing to meal prep is my Egg Muffins!!! They make mornings so much easier!! They can be eaten for a breakfast on the go or as an easy morning snack!! Check out the reciepe: 

Egg Muffins: This reciepe makes around 8 muffins

10 eggs

4 cups of fresh spinach 

1 cup of shredded cheddar cheese 

Scramble eggs with salt, pepper, garlic powder, and Italian seasoning in a mixing bowl. Add spinach and cheese mix until everything is mixed together evenly. Scoop into a muffin pan. Bake at 400 degrees for 15-20 mins. 

That’s it!! Super Easy!!!
